Bio:
Preston Mitchell is a fifth-generation Hatch Valley farmer and founder of the Hatch Chile Store, specialising in Hatch green chile, New Mexican cuisine, and seasonal growing and cooking traditions. Raised in one of the world’s most famous chile-growing regions, he brings hands-on expertise in how Hatch chiles are grown, harvested, roasted and cooked, as well as practical advice on crop timing and flavour-first recipes. His work focuses on preserving authentic farm-to-table methods while making regional ingredients accessible to home cooks across the U.S. Alongside his agricultural roots, Preston is a CPA, serial entrepreneur and business professor at New Mexico State University, where he teaches entrepreneurship and regularly hires former students into his portfolio companies. He launched his first business at 14 and went on to build one of the first nationwide farm-to-table brands dedicated to Hatch green chile. Today, he blends real-world farming knowledge with business insight, helping modern food brands grow without losing their regional identity or heritage.
